What Vegans Eat – Day 551: Special Travel Edition


Breakfast:It’s our last oatmeal by the pool before we leave tomorrow – Rolled Oats, Bananas, Sunflower Seeds and Chia Seeds with Earl Grey Tea with no soy milk…we’re out of milk.
Daily Green Juice: Riding around doing last minute errands, looking for a box to ship back the books we’ve brought and collected during the trip, to make room in our already stuffed suitcases. We stopped at Whole Foods in Campbell for our Green Juices: the Campbell Blend (which I love because it’s loaded with Ginger) and the Killer Green Buzz.
Dinner: Saying goodbye to Gary’s sister Deb and brother-in-law Allen at the current favorite family eatery, Khanh’s. We got our usual dishes, starting with the Tofu Rolls.
I ordered the Vegetable Combo which comes with that great Brown and Red Rice. Gary ordered the Rice Vermicelli with Vegetables Combination, extra spicy!
Evening: Back at the pool house we started to prepare for our journey to New York the next day. I made a pot of Mint Tea, using up the last of our fresh mint from the vegetable gift box we received a few days before. The treat was the gorgeous California Grapes grown in cousin Nancy’s garden.
