What Vegans Eat – Day 550: Special Travel Edition

Breakfast: I made a refreshing fruit Salad with Mangoes and the Red Bananas we purchased we before at the Staff of Life Market. They finally got ripe!

Lunch: Gary made an amazing Red Lentil Gumbo combining some of the remaining items we have purchased during our 3-month stay in NorCal along with the gift basket of veggies from Stan and Maura which they gave us in lieu of flowers the night of Gary’s new play reading. It had Bell Peppers, Tomatoes, Onions, Anchor Steam Beer, Herbes de Provence. We each had three bowls with a little Brown Basmati Rice.

Dinner: Making sure we check in with all the family here before we leave we had an impromptu dinner with cousins Nancy and Wade. I made our Sourdough Cornmeal Pancakes, Nancy made a gorgeous compote with Berries, Pineapples and Bananas and we served it with Miyoko’s Sundried Tomato Garlic Vegan Cheese, Red Grapes from their garden, Apples, Figs, Dates and Red Wine.

We finished with a special Black Tea that was given to them a while ago. It was rich.
