What Vegans Eat – Day 567

Breakfast: I wanted cold cereal and milk. I know a lot of people love cold cereal anytime of the day or night. I made Coconut Milk with Let’s Do Organic Coconut Cream. We blend it with three cups water, which is more than recommended on the box but we like it best this way, plus it has less fat per serving and lasts longer. I served it with Rolled Oats, Blueberries, Ground Flax Seeds, Apple and Banana and it was so good, so good, so good! Gary drank some iced Earl Grey Tea with an orange slice and I had cold brewed Rooibos Chai.

Lunch: Tuesday is It’s All About Food Day and I went to the Progressive Radio Network to record my show with guests Kathy Freston and Sommay Jaijong who is also known as May Kaidee. After a wonderful conversation with Kathy Freston about her new book, The Book of Veganish, I was happily surprised to meet May Kaidee in the studio. She came splendidly dressed in a ceremonial costume and brought me some Spring Rolls and special sauces (Peanut and Chili) to sample with the rolls and a Black and White Rice Mix. The Spring Rolls had Tofu, Cilantro, Ginger, Carrots and Lettuce. She told me she will be opening a new vegan Thai restaurant in Manhattan early in October.

Daily Green Juice: The GoOrganicNYC delivery arrived and Gary made my green juice. Thank you Gary! I wanted to do it myself but got wrapped up in website updates and then had to leave for my program so I ran out of time. His expertly made juice consisted of Kale, Collards, Celery and Carrots.

Dinner: And another surprise still. I came home from the studio and a coaching that kept me in Manhattan. Gary had shopped and chopped and made a beautiful dinner that we ate al fresco. The only challenge was keeping the citronella candles lit because the lovely cool summer breeze kept blowing them out. We had Steamed Cauliflower, Carrots, Romaine Lettuce Salad with Garbanzo Beans, Tomatoes tossed with Little Seed Caesar Dressing.
