What Vegans Eat – Day 581


Breakfast: Here is the morning cereal with all its components, served way I like it. We had creamy Polenta and I added Coconut, Blueberries, Flax Seeds and Bananas to mine, served with cold-brewed Jasmine Tea.
Lunch: Some days we are hungrier than others. Here is what our BIG FOOD lunch table on the terrace looks like.
The Kale Salad with Tomatoes was tossed with Little Seed Caesar Dressing. I topped mine with a meaty Mushroom Medley.
Gary cooked up a quick Spiced Chickpea dish with Green Bell Peppers and Red Onions. The leftover Acorn Squash was sweet and seemed like a dessert.
Daily Green Juice: Kale, Collards, Celery, Lemon
Tea Break: Walking out in the ‘hood here in Forest Hills on Austin Street we stopped by the Red Pipe. We haven’t been there for ages. They had more vegan items on the menu and they now have a liquor license! We had Chai Tea with Steamed Soy Milk.
Dinner: After a big lunch, dinner came late and was light. I made my “Bagel and Schmear” – Corn Thins with Avocado, Tomato and Red Onion. Gary topped his Corn Thins with – you guessed it, Peanut Butter and Apricot Butter.
Evening: I had cold brewed some Ginger Chili Teasane and we sipped on some after our dinner out.
