What Vegans Eat – Day 638

Breakfast: This was a difficult morning. We went to bed late, upset about the election results. But the sun came up and I got up. I was glad to have Buckwheaties to simply pour in a bowl. I thought about the name Buckwheaties, and how it was likely named after the boxed cereal, Wheaties with the tag line “the Breakfast of Champions.” I was not feeling like a champion this morning, not after last night’s elections. I hoped the Buckwheaties could turn things around a little. I topped it almost robotically with all the good stuff: Blueberries, Flax Seeds, Raisins, Soy Milk. It helped settle my stomach.

Dinner: When the going gets tough, the tough get going. After reading article after article on the shock of the election I went into the kitchen. Keep calm and get cooking. I made a favorite comforting soup, Carrot Lentil. I cooked up some dried mushrooms that included shiitake, maitake and oyster and topped my soup with them. I also made Polenta with lots of dried Basil in it. It is a favorite flavor combination of mine.

Evening: Ever since I saved the black bean aquafaba the last time I cooked black beans I had been wanting to make Chocolate Mousse with it. I had frozen the aquafaba so it would last. I was ready to make it. The recipe I used was from the Aquafaba cookbook and I modified it slightly. It’s pretty amazing.

We ended this exhausting and challenging day with Almond Rooibos Tea.
