What Vegans Eat – Day 660


Breakfast: We had a basic breakfast. For me that consisted of a little oatmeal topped with Banana, Blueberries, Chia Seeds, Cashew Milk and Jasmine Tea. The special meal was coming later.
Daily Green Juice: Gary made the weekly batch of green juice with Kale, Collards, Celery, Carrots, and Lemon. Thank you Gary!!
Dinner: It was time for our home cooked Thanksgiving meal. Since we were away over Thanksgiving I’ve been craving Thanksgiving à la Responsible Eating And Living. I wished it and Gary made it. How lucky am I? He baked an Acorn Squash stuffed with a filling based on the Healthy World Burger only with Thanksgiving herbs and spices.
He used the same filling to make Tournedos de Riz Sauvage à la Sauce Dijonnaise, Mashed Sweet Potatoes, Mashed Potatoes and Porcini Mushrooms (for me). What a feast!
