Breakfast: I was looking forward to a big salad for breakfast. I was dreaming about it when I went to sleep the night before. Yeah, I dream about eating salad. Here it is, my dream salad: Baby Kale, Walnuts, Red Onions, Pears and Creamy Balsamic Dressing.
Lunch: My to-do list is long and I really wanted to shorten it. I worked nonstop for hours. When I got hungry, I grabbed one of the Tournedos de Riz Sauvage that I had made a couple of days before. It was like eating a cold hamburger. I loved it.
Shortly after that, still hungry, I took a small bowl of cold Cassoulet.
Daily Green Juice: I made a new batch of juice for the week, with Kale, Collards, Cabbage, Celery, Ginger and Lemon. It’s thick and super good.
Dinner: Gary was coming home late from California where he attended his uncle’s funeral. I was going to our building’s board meeting. As soon as the meeting was over, I started reheated the food I had prepared this week, so that Gary would have a nice homecoming. We started with Roasted Squash soup from the Vegan Holiday Cooking from Candle Cafe cookbook. I swirled a little Cashew Cream on top.
The main plate consisted of Tournedos de Riz Sauvage à la Sauce Dijonnaise, Cassoulet and Green Beans.
For dessert, we had Poached Pears with Raspberry Coulis and Cashew Cream. This dish never ceases to amaze me in its simplicity, elegance and deliciousness. Welcome home, Gary!
