What Vegans Eat – Day 785


Breakfast: I had to do it again. Yesterday’s Buckwheaties Plus with Blueberries, Coconut, Walnuts, Raisins, Cacao Nibs and Soy Milk was too good not to do have it again, so I did.
Dinner: I like to get our taxes done early. I had prepared most of it in January but just discovered I had made some mistakes in my Quickbook accounting software. Ugh. I spent the day making corrections. I was glad to have fantastic leftovers: Sprouted Corn Tortillas, Black Beans, Whole Grain mix (Millet, Brown Rice, Red Rice and Black Rice), Cashew Cheese Fondue and Red Cabbage Salad.
Daily Green Juice: Kale, Collards, Red Cabbage, Celery, Lemon, Ginger.
Evening: Finally done with the taxes, all I could think of was relaxing with a beer and our favorite comfort foods. You know what they are, sure you do – Corn Thins, Peanut Butter and Apricot Butter. We finished with Vanilla Almond Rooibos Tea.
