Breakfast: My birthday is coming up on Saturday, Earth Day. We’ve decided to have a party. When we make parties, it requires at least three or four days of planning. Since we don’t have a car, we’ll be walking to a lot of stores to get the foods we need. This is a great workout! To start the day, I made a breakfast bar of toppings for the Polenta Cereal that was cooking, along with sliced oranges. It’s fun to have a choice of cereal toppings to Choose from: Walnuts, Cacao Nibs, Raisins, Flax Seeds, Coconut and Mango.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon, Ginger
Dinner: After shopping, I had a lot of work to catch up on, including completing the preparation for the recipes I will be sharing at the Food Revolution Summit. Have you signed up yet? It’s free! Register HERE. We defrosted and reheated the Baked Pineapple Tempeh we had recipe tested a few weeks ago. It was good to have food already made.
