What Vegans Eat – Day 800


Breakfast: Pancakes were the only thing that would get us through the long day ahead. I made our newest recipe: Late Night Corn Pancakes. I was defrosting some Aquafaba to use in the Lemon Meringue Pie I would be making for my birthday party and there was enough leftover for the pancakes. It was another good excuse to make them.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon, Ginger,
Dinner: Everything takes longer then expected. Gary did more food shopping for the party on Saturday while I stayed home and worked at a frenzied pace. I was hoping to start cooking today for the party but I had deadlines to meet! I had to eat, and made a GIANT Kale Salad with Quinoa, Pineapple, Red Onion, Olives and Balsamic Vinegar.
