Brunch: Did I mention that we have a lot of food in the house? After our party on Saturday, we packed up some of the leftovers and put them in the freezer. We left the sauces and schmears in the refrigerator. Creamy Basil Pesto was one of the sauces. We had used it on one of the Chickpea Flour Flatbreads. I wanted more of that pesto. Gary made a pot of Millet and warmed up the pesto. I love this sauce because it is rich, creamy, oil-free and green!
Daily Green Juice: Kale, Collards, Celery, Carrots, lemon, Ginger
Dinner: After all that cooking just a few days ago, I don’t know where Gary found his inspiration, but he did. He made a gorgeous Tofu Lasagna, using Baked Tofu as the noodle, along with Spicy Marinara and the Almond Mozzarella Cheeses I had made for the party.
He also roasted some White Potatoes, Butternut Squash with Red Onions, Celery and fresh Rosemary.
Evening: I don’t think I have eaten a lot of fruit, if any, in the last few days and I was craving some. I made a couple of refreshing smoothies with Coconut Milk, unsweetened Cherry Juice, Frozen Strawberries and Blueberries and Maca Powder.
Last but not least, we made our first Banana Tea. We know bananas help with sleep at night because they have melatonin. But the skins are high in magnesium. Cooking the banana, with the skin in water and straining off the liquid makes a nutritious tea. It was quite relaxing.
