What Vegans Eat – Day 818


Breakfast: We’re having fun with crepes. I made a pile of them yesterday and now we get to enjoy them. Gary filled his with Apricot Butter and Almond Yogurt and rolled them up. I went savory first, with Almond Cheese and then sweet with Blueberries and Almond Yogurt. Vive La France! Congratulations Emmanuel Macron. We are celebrating the French elections.
Lunch: No Tacos today, just taco salad, which I like even better. Shredded Romaine Lettuce piled high and tossed with Tahini Dressing, with Black Beans, Guacamole, Salsa and shredded Almond Mozzarella Cheese. Yes, this great cheese recipe shreds.
Dinner: Dinner was simple – Mashed Potatoes mixed with chopped Scallions and Spinach and Onions seasoned with spices.
Evening: I did make Chocolate Mousse and I splurged with a couple of teaspoons. Gary suggested freezing it, so away it goes.
