Breakfast: I got up early and ate an Apple. I was exhausted and just went back to bed. I needed more sleep. There was a lot to do, but if I was tired, nothing would happen. Gary and I both slept late actually. When we finally did start the morning, we had sliced Oranges.
Lunch: I said this before, I love making a big soup with my Green Zenphony leftovers. I added some mushrooms and water and heated it all up. Fantastic.
Daily Green Juice: Kale, Celery, Carrots, Ginger
Dinner: We started with a late afternoon snack of Carrot and Celery Sticks and Little Seed Caesar Dressing mixed with Almond Yogurt.
I was heading out to a town hall meeting. It was going to be a long night. I finished up the remainder of the Black-Eyed Pea, Corn and Tomato Soup.
Evening: The meeting was fantastic, inspiring. There was a huge turnout. All the politicians were there – our council member, Karen Koslowitz, our Borough President Mindy Katz, our State Senator Toby Ann Stavinski and the NYC Mayor Bill di Blasio. The mayor answered people’s questions for hours. His commissioners and staff members were there ready to connect with people with issues pertaining to their department. When I got back, I got to sample the dinner Gary made – Baked Sweet and White Potato Fries and a Zucchini Frittata, a variation on our spinach frittata recipe.
