What Vegans Eat – Day 850

Brunch: I thought I bought Dandelion Leaves at the store. Gary thought our GoOrganicNYC.org order had substituted something with Spinach. “Polly put the kettle on and we’ll all have tea…”. When we shared our thoughts with each other we figured it out – I had bought Spinach and not Dandleion Leaves at the store, and it had nothing to do with our GoOrganicNYC.com order. Mystery solved. This bunch of Spinach was unusual with long flat leaves. Gary made a savory breakfast (I love savory breakfasts!) with the Spinach, Red Onion, plus yesterday’s Zucchini Frittata, crumbled into small pieces.

Daily Green Juice: Kale, Celery, Carrots, Lime, Ginger.

Dinner: We’re getting low on fresh produce. That’s when the root vegetables come in handy. They last the longest. We had Cabbage, Carrots, Potatoes (white and sweet), Shallots and Garlic, roasted with Red Wine and Black Pepper. It was served with a Tahini and Almond Yogurt Sauce.

Evening: Why the picture of a full moon? It’s a Strawberry Moon! It’s the last full moon of spring and stunning this evening. According to almanac.com, June’s Full Strawberry Moon got its name because the Algonquin tribes knew it as a signal to gather ripening fruit. It was often known as the Full Rose Moon in Europe and the Honey Moon. We toasted to the moon with my favorite evening tea blend: Chamomile, Mint, Ginger, Lemon.
