Breakfast: It almost looks like an egg, over easy, right? But it’s not. It’s just me having fun with food. The bottom of the bowl has cooked Steel Cut Oats cooked with Apples. It’s dusted with Cacao Nibs and Chia Seeds and topped with Apricot Butter and Cashew Yogurt. And it so much better tasting than an egg and more nutritious too!
Daily Green Juice: Kale, Collards, Celery, Carrots
Dinner: It’s one of our favorite meals – Make Your Own Burrito. This was more of an evening Breakfast Burrito with Tofu and Potatoes. The fillings consisted of Avocado, Baked Home Fries, Corn with Pinto Beans and Bake Tofu. The tortillas were Ezekiel Whole Grain.
Evening: We settled in with Teeccino and Frothed Soy Milk served with Brown Sugar Cinnamon Biscuits.
