Breakfast: I got up before Gary did and made Garbanzo Bean Flour Waffles. These have a cake-like texture that’s a nice change from some of our other waffle recipes. We topped them with Cashew Yogurt and Apricot Butter – what else?
Lunch: Yes, it is time for lunch at Green Zenphony. I ordered from the lunch menu, which means, I got soup. I chose the miso. It’s one of the best.
For my main dish, I got the Veggie Beef, and Tofu in a Tomato Basil Sauce.
Gary got his favorite Veggie Pork Noodle Soup.
Daily Green Juice: Kale, Collards, Celery, Carrots
Dinner: A simple Romaine Lettuce Salad with Tomatoes and Tahini Dressing was all that was needed for dinner.
