What Vegans Eat – Day 903


Breakfast: Yes, I will have Garbanzo Bean Flour waffles two days in a row. It is so much easier too on the second day, when they are already made. Top them with Apricot Butter and Cashew Yogurt.
Lunch: After our walk we picked up some fruit at the market across the street. We have been lucky lately, they have been selling organic fruit at very reasonable prices. We picked up a Pineapple and Green Grapes. Gary cut up the Pineapple and we had it for lunch. Sometimes after a very hot workout, all you want to do is hydrate. This is a good way to do that.
Daily Green Juice: Kale, Collards, Celery, Carrots
Dinner: Gary took the cooked Barley and made a Spinach Walnut Pesto to mix with it. It’s a winner. It was served with Baked Tofu and a Romaine Lettuce Salad with Avocado, Tomatoes, Baked Polenta Croutons and Tahini Dressing.
Evening: We both wanted something, and this Strawberry-Banana-Oat Milk Smoothie hit the spot!
