What Vegans Eat – Day 917


Breakfast: All right, I will tell you, I love Steel Cut Oats, probably more than Rolled Oats. I love the texture, there is more to chew and it’s denser. We had Steel Cut Oats cooked with Apples and Apricots and topped with Chia Seeds, Cacao Nibs, Fig Butter and Yogurt.
Today is It’s All About Food day, and I went to record the show at the Progressive Radio Network Studio. On the way, while eating an Apple for a quick lunch, I saw the new Beyond Sushi that opened up 3 1/2 months ago on 37th Street by 7th Ave. We will be going there a lot! I can’t wait to try it. It’s bigger than the other two location with a bar. I had a great show with NYC Councilmember Helen Rosenthal and Ghanim Al Sulaiti from Qatar
Dinner: Gary wanted to reward me for working so hard and I came home to a comfort food plus dinner with Garlic Mashed Potatoes, Mushroom Gravy, Baked Tofu, Peas and some mixed Olives.
Evening: In the evening I did my singing practice and yoga and worked up an appetite. I ate a small bowl of Mung Bean Dal and nibbled on some Sauerkraut and the remaining piece of Caraway Seed Whole Grain Bread I had made last week with a little Sesame Butter.
