Breakfast: Gary and I slept over my parents’ house along with my sister and brother-in-law. Breakfast came together easily with leftovers from yesterday’s celebration.There was plenty of fruit – Watermelon, Honey Dew, Cantaloupe, Strawberries, Blueberries, Raspberries and Prunes, plus Red Pepper Hummus, Vegan Chopped Liver, Raw Fruit Tart and Raspberry Vanilla Cake.
Lunch: Lunch was pretty much the same, more of yesterday’s leftovers which included Baked Tofu. We spread the Red Pepper Hummus on the Baked Tofu and my mom thought this was a genius combination. You should try it!
Dinner: After dropping my sister and brother-in-law at the airport, Gary and I returned home. I finished up the Garbanzo Bean, Spinach and Onion dish he had made only two days before which seemed so long ago! He made a bowl of Oats for himself.
Evening: With a lot of reading to catch up on, I brewed a pot of Chamomile/Lemon/Mint tea and got to work.
