Breakfast: The weather is getting cooler. It’s a good morning for cooked oatmeal made with apples and raisins. I topped mine with a sprinkle of cinnamon and cacao nibs, which are my “chocolate chips’.
Lunch: I’m back with my parents to take dad to a doctor’s appointment. Mom reheated the leftover Mashed Potatoes and Buckwheat. I made a Big Salad with Romaine Lettuce, Kale, Green Olives, Grated Apple, Tomatoes and Red Onion.
I brought a jar of our homemade Red Lentil Soup.
Dinner: I rushed home after the appointment. I had so much work to do! Tomorrow is my radio show, It’s All About Food and my guest is Dr. Joel Fuhrman. I had to finish reading his new book, Fast Food Genocide. I also had to finish editing a video that went with the interview with my second guest, Mike Boss. Yes, my parking “Carma” is still good! Gary made a Kale Salad, Baked Yams and Tofu Masala. We’re working on clearing out the refrigerator of perishable items since we’ll be in California. There were a few packages of tofu, which is why you are seeing more Baked Tofu these last few days.
Evening: I made our evening treat, Strawberry Soft Serve made with Cashews, Strawberries of course and a Banana.
