What Vegans Eat – Day 1230, Travel Edition – Bay Area, CA

Breakfast: We are now fully installed in the home we are staying at in Sunnyvale. I made Steel Cut Oats with Cacao Nibs which I have missed and loved. Sweetened with Raisins, it’s Chocolate Heaven for me. With cream on top, or for us, it’s Almond Ricotta.

 
Lunch: For lunch, it’s Greens, Greens and nothing but Greens! (Lyrics from the Witch’s opening from Into the Woods that we are directing.). Plus, Red Onions, Walnuts and Avocado splashed with Balsamic Vinegar.

 
And perhaps a little leftover Chocolate Cake from the Vegetarian House?

 
Dinner: After tonight’s rehearsal, which is a physical workout for me, conducting and teaching the music, I had some Yukon Gold Potatoes and Red Onions with Dijon Mustard.
