What Vegans Eat – Day 1263, Travel Edition – Bay Area, CA

Breakfast: We have a little more than a week in California directing Into the Woods before we head home. Now is the time to get creative with the remaining ingredients we have so that we don’t waste any food that we bought. We are out of apples and other fresh fruit. I made Rolled Oats with Raisins, Pumpkin Seeds Cinnamon, Soy Milk and a dollop of homemade Plum Jam from one of our cast members. The jam is excellent, tart and not too sweet.

 
Lunch: We had a 1/2 container of firm tofu in the refrigerator. Before rehearsal I mashed it up adding in Dijon Mustard, chopped Celery, Turmeric, Tahini, Olives and some of the Olive Water from the jar. I served this Tofu “Egg Salad” with Celery Sticks and Sliced Tomatoes. I was very pleased with how it came out.

 
Dinner: Gary taught theater at Presentation High School, a private girls school a few decades ago. Many of his students remained friends. Working with Gary now on Into the Woods I can see what a wonderful teacher he is and how he has been such a positive influence on so many of his students. Raya is one of them. She now has a family with two children. We try to see her when we can. She invited us to dinner this evening and she prepared a feast. She wanted to introduce us to her aunt who was recently treated for ovarian cancer and was looking for nutritional advice. Raya served us Virgin Mojitos.

 
The dinner had an Indian theme with Samosas and delicately seasoned dishes of Rice, Okra, Cauliflower and Zucchini. There was a big green salad with sweet chunks of Mango.

After an evening of lively conversation Raya removed the dinner dishes and put out fresh Fruit and a vegan Chocolate Cake.

 
We’ve been lucky this trip! This is the second vegan Chocolate Cake we’ve had. Raya and her daughter Jade remembered that I love tea. They served us Black Tea with Cardamom.
