Breakfast: Nothing special, yet everything special about our morning oats. When I wake up hungry this is what I crave. I love to be able to be outdoors and enjoy breakfast in this peaceful serene environment. Happily, once again, we have Rolled Oats with Bananas, Raisins and Soy Milk and English Breakfast Tea. Everything is right with the world.
Leftovers are a gift from yourself in the past to you in the present. This lunch came from dinner a few days before, (see What Vegans Eat – Day 125), consisting of homegrown sautéed zucchini with red onion and rosemary and fluffy quinoa and tahini.
Dinner: Visiting my best friend Nancy and her family in San Francisco, we put together a salad of Baby Greens, Field Roast Chao Slices, Avocado, Snap Peas, Carrots, Hearts of Palm, English Cucumber, Arugula and Baked Tofu with a Rice Vinegar and Olive Oil Dressing.
Evening: Later we caught up on everything and I discovered Almond Bites, lovely little morsels of almond ice cream coated in chocolate which was paired with Madagascar Vanilla Rooibos Tea. Sweet!
