What Vegans Eat – Day 1496


First Meal: With cooked organic Purple Sweet Potatoes and Pinto Beans, I made a variation on my Breakfast Black Beans recipe. The last two pieces of Everything Flatbread with Sesame Butter went with it.

Second Meal: I am flying to Florida tomorrow so I prepared the produce that was still in the house. I baked a Japanese Yam until it was oozing out of its skin. I popped a bulb of organic Garlic in the oven at the same time to roast it. While it baked, I steamed a Cauliflower. When it was soft I squeezed the roasted garlic cloves into the pot and blended it all together with an immersion blender. Next, I scooped a serving of the mashed Cauliflower into a baking dish and baked it for about 15 minutes. It was Gary’s idea for me to make Roasted Mashed Cauliflower. I sliced up a very sweet ripe organic Pear and served it with the Yam and Cauliflower. Gary, I am sorry you were not here with me to enjoy this! I will make it for you when you return home.
