What Vegans Eat – Day 1528

Tea: When it comes to plant milk, we typically choose plain, unsweetened organic Soy Milk made from soy beans and water and nothing else. When we are out of it, we get creative. Today I made organic Hemp Milk with a little organic Almond Extract. It was delicious with my organic Maté tea.

 
First Meal: With a fresh jar of Almond Ricotta in the refrigerator I decided to create a new salad dressing with it, adding in fresh organicgarlic, capers, organic onions and organic herbs. It’s a winner.

 
I used it in today’s organic Kale Salad with organic Carrots, organic Red Onions, organic cooked Millet.

 
Snack: In addition to celebrating my upcoming birthday, we planned to go out with my friend Nancy whose birthday is today. Before leaving, we had a snack of organic Green Juice (Kale, Collards, Celery, Carrots, Lemon) with olives, organic Peanuts and Medjool Dates.

 
Second Meal: We met at Bareburger in Manhattan’s Times Square district. This restaurant is now BOASTING a 50% Vegan Menu. The world is changing. It was Happy Hour. If you haven’t heard, I am a sucker for Happy Hour. I had the Bronx American Pale Ale.

 
 
There are lots of burgers here including the Beyond Burger, the Impossible Burger and some of their own scratch made veggie burgers, in addition to the animal flesh burgers. Gary chose the Beyond Burger.

 
The Guadalupe was for me with a black bean, roasted corn & poblano patty, guacamole, pickled red onions, tomatoes, alfalfa and wrapped in a collard leaf. It was very good!

 
Yes, we had Fries with that.

 
And Sweet Potato Fries too!

 
Each serving of fries came with two sauces. We had a lot of sauce.

 
We didn’t have much time left since we were going to see the play What the Constitution Means to Me. But we were celebrating two birthdays, Nancy’s and mine so we managed to squeeze in dessert. I chose the flour-less chocolate cake with coconut ice cream. Bareburger has done well by the vegans.
