First Meal: The day after our anniversary, Gary served me a perfect cup of Chai with Soy Milk.
Then we enjoyed Steel Cut Oats and Millet Waffles that we made yesterday. I put Raspberry Pear Compote on my first waffle.
The second waffle was a bit more decadent. We had a small amount of chocolate frosting leftover from the cupcakes I had purchased at Erin McKenna’s Bakery to bring to a wedding a few weeks ago. Per Gary’s suggestion, I mixed it with Peanut Butter. This was too good.
Second Meal: I knew we’d be having Black Beans, Brown Rice and Tortillas today so I soaked some Almonds in advance to make Almond Ricotta. We had some Broccoli Stalks that we usually save for juicing. Without all the juice materials in the refrigerator I decided to slice the stalks in thin circles and boil them with garlic. I really like them this way! Dr. William Li says the stalks are very nutritious.
Green Juice:
Tonight’s outing was to see the play Ink on Broadway. It’s the chilling true story of Rupert Murdock when he bought the U.K. newspaper, The Sun. It helps understand how we got to where we are today with the breakdown of ethics and pride in getting the real story and telling the truth in media. We stopped at the Juice Generation for Supa Dupa Green Juices before the show.
Snack: I finished up what was left of the Toasted Buckwheat for a late night snack.
