What Vegans Eat – Day 1649


First Meal: I made some Jasmine Tea. I knew what I really wanted was a cool Smoothie. I made one with Kale, frozen Acai, an Apple, Peanut Butter, Cocoa, Flax Seeds and Soy Milk. So filling!

Second Meal: My cousin Donna is visiting this weekend from Jacksonville with her daughter Megan. With mom’s 86 birthday coming up in nine days this was a good opportunity for a family gathering at mom’s house to celebrate. My brother and his family joined us. We went to P.F. Chang. We started with three orders of Edamame.

I tried the Eggplant dish today. Delicious.

Gary went with the rich Thai Curry.

We were all pretty stuffed when we got back to mom’s. I had lots of fruit delivered to her house a few days ago and she cut it all up for us to enjoy, Oranges, Watermelon, Strawberries, Grapes. Afterwards we went swimming at the Clubhouse pool.
Third Meal: I had made a Tarte aux Pommes yesterday that I forgot to bring to mom’s house. Gary and I couldn’t wait to get home and have a piece.

After our dessert we had a Kale and Cherry Tomato Salad.

Next up was leftover Brown Rice Pasta and Marinara topped with Black Bean. Gotta have my beans!
