First Meal: I LOVE LEFTOVERS! Especially today’s offering. The Garbanzo Bean Flour Omelets with a seasoned Spinach Ricotta filling I made two days ago are even better today, warmed up and served with Ketchup. Soup du jour was Carrot Lentil.

 
Second Meal: The Carrot Lentil Soup was extended and enhanced for dinner with added Corn, and topped with homemade Yogurt.

 
Second course was a colorful Kale Salad topped with Red Cabbage Sauerkraut.
