What Vegans Eat – Day 1750

First Meal: Yes, Gary requested pancakes again and he got them. Today I made Blueberry Corn Pancakes and they were super yummy served with Maple Syrup (a Thanksgiving holiday time treat) and Grapefruit.

 
Second Meal: Our Pears are ripe and sweet. A lovely appetizer.

 
Next course was Rice Cakes topped with Guacamole and Red Onions. I was super hungry waiting for everything to warm up.

 
The main course was Black Beans and Red Onions topped with Yogurt and Red Baked Potatoes with Yellow Mustard. It was worth waiting for.

 
Oh, and then I was served this surprise Asian Slaw with Napa Cabbage, Carrots, Onions and Almonds with a dressing of Peanut Butter, Apple Cider Vinegar, and Apricot Butter seasoned with Coriander and a squeeze of lemon. Delightful!

 
Third Meal: It was my turn again in the evening to make our treat. Tonight was a Blueberry, Raspberry, Cashew Yogurt Soft Serve.
