What Vegans Eat – Day 1804


First Meal: I did it! I made Soy Foam almost as good as Gary’s this morning. My Soy Foam typically deflates quickly. But today I took the time making it and it came out wonderful. Like Gary makes it. I made Steel Cut Oats too, served with Blueberries, Flax Seeds, Apples, Raisins, Cinnamon and Sunflower Seeds.

Second Meal: We had another spectacular meal today. Gary baked the Potatoes and Sweet Potatoes and made some Tempeh Bacon. I made the Middle Eastern Salad with Cucumber, Parsley, Tomatoes, Garbanzo Beans and Tahini. Gary made the Romaine Lettuce Salad, chopped the Scallions and an Avocado. We took out the gorgeous Pesto Cream from the refrigerator Gary made a couple of days ago. It only lasts a few days and I can’t get enough of it. We warmed up a couple of homemade Pita Breads. Here is the feast!

We started on small bowls of Corn Chowder that I made a couple of days ago.

Next we put together our Pita Pockets.

Last but not least, for me were the Baked Potatoes with Pesto Cream. I was too full to touch the sweet potatoes. They will return tomorrow.
