What Vegans Eat – Day 1815

First Meal: I made a new batch of Cashew Yogurt adding less water to make it very thick and rich. Gary says it’s the best. I like it with Date Paste.

 
I made Hemp Milk, blending Hemp Seeds with Water. It’s pretty simple. I had some Houjicha tea and drove out east to visit with Mom.
 
Second Meal: I whipped through Trader Joe’s to do a quick shopping for our house as well as for my mom. Then I went into the Shop Rite in the next strip mall to get some things Mom likes that Trader Joe’s doesn’t have. I met my brother and mom at her house and we took a trip to the nearby cemetery where my dad is buried. It’s his birthday in a few days and Mom wanted to go. Afterwards we had lunch at Plant Wise. I wanted to make lunch at mom’s house so my brother and I could get more work done but Mom had a little temper tantrum about wanting to eat out. She won. Well, we all won because we went to Plant Wise. I got the Arugula Quinoa Salad to share with Mom.

 
My brother got the Zucchini Noodles that came with Roasted Veggies and Beans on top. It was very good.

 
Mom and I also shared the Egg Wise Wrap and the Beet/Carrot/Apple Juice.

 
Third Meal: It was a long day and fortunately the Universe gave me a great parking spot when I got home. And Gary had dinner ready. Breakfast for dinner, a favorite, starting with Baked Home Fries and Corn Torillas.

 
A gorgeous Fritatta with Tofu, Bell Peppers, Kale, Garbanzo Bean Flour, Herbs and Spices.

 
The plate had it all including Guacamole.
