What Vegans Eat – Day 339

Breakfast: Apple is today’s theme! Apples and raisins are delicious, especially when you haven’t had them for a while. We were out of some basic fresh and dried fruit staples and had picked some up the night before. Yay! We both got excited about our morning oatmeal cooked with all of our favorites – apples, raisins and apricots, topped with coconut, flax seeds and soy milk and Kukitcha tea. I needed to be fortified for the day, getting as much done on my computer as possible before taking it to the Apple Genius Bar. From the Apple Breakfast Bar to the Apple Genius Bar, here I go.

Daily Green Juice: Kale, Collards, Celery, Lime, Ginger
 
I got to my appointment at the Apple Genius Bar on time and had to wait about a half hour before being called upon. Since the Tekserve manager a few weeks ago told me that my computer could reject a new logic board, I couldn’t help but compare these computer repair centers to hospitals and emergency rooms with the long waits, anxiety about the diagnosis and having your precious MacBook rejecting parts like donor organs.

The good news is that Apple took my computer and I will get it back in 4-5 days, hopefully revitalized and ready to go for a few more years when I pick it up, at no charge. Stay tuned!
 
Dinner: My stomach was growling when I got home. One of the loveliest moments is to open the apartment door and be greeted with the aroma of fragrant dishes. Gary had been cooking. He made some simple favorites:

It all came together, topped with a quick and yummy Cashew Cheese Sauce. We always have seconds.

Evening: One good turn deserves another. After a great dinner, I prepared a quick dessert, Fruity Nut Truffles. Instead of all raisins, I used 1/2 cup of apricots and 1/2 cup raisins and added about 1/4 cup of Maker’s Mark Bourbon for a fun flavor replacing the vanilla. I call them Boozy Balls and served them with Vanilla Almond Rooibos Tea.
