What Vegans Eat – Day 633

Breakfast: This was my breakfast made with special appliances. I am grateful to have them both. I made a thick smoothie with Coconut Milk, Cacao Nibs, Maca Powder, Peanut Butter, Blueberries, Strawberries, Banana and Kale Stems. The Vitamix is great for blending up just about anything. Since I wasn’t planning on making a green juice in the next few days, the kale stems that normally would be juiced, were blended instead and did not go to waste. This makes me happy.

Lunch: I had made Almond Milk a few days ago. The bonus of making your own nut milk is that you can also make Nut Meat Salad. Gary got creative with the recipe and added in 1/2 cup of my sauerkraut. Pow! This spread is a knockout.

It makes a terrific quick lunch, spread on Corn Thins.

Daily Green Juice: Kale, Collards, Celery, Carrots
 
Dinner: Yams baked in the oven, a quick romaine lettuce salad and that’s dinner!

Evening:
An easy, sweet treat – Strawberry Ice Dream. There are many ways to make it, based on what’s available. This one had a frozen Banana, frozen Strawberries and Coconut Milk with Shredded Coconut Sprinkles.
