What Vegans Eat – Day 676

Share

Breakfast: Gary made a big pot of Vanilla tea, which we call weekend tea. It was a lovely way to begin our Saturday morning along with reading the NY Times. I asked Gary what he would like for breakfast. Pancakes? Waffles? No, he said, I want a green smoothie. Oh yeah! That made me happy. I got right to it. I made a variation on the Super Green Power Smoothie, using a bag of frozen strawberries instead of blueberries, peanut butter in place of tahini, cacao nibs instead of cocoa powder and an apple in stead of the pear and orange. I guess I made a new recipe! Here it is, the Super Duper Green Power Smoothie. It made a lot and we sipped them slowly. We were not hungry until dinner.

Dinner: Famished, I had requested “meatloaf”. Gary put on his apron and got to work. He made a beautiful dinner, with REAL-style Meatloaf, Meatloaf Tomato Sauce, Smashed Caulflower and a Broccoli Baby Kale sauté mix.

Daily Green Juice: I didn’t have my green juice until late at night. This one is made with Kale, Collards, Cabbage, Celery, Lemon, Ginger.

Evening: I made a Challah bread so that we could have cold meatloaf sandwiches tomorrow. We could not resist sampling a few slices of the warm bread fresh out of the oven. This is a dangerous recipe to make because it’s very good!
