What Vegans Eat – Day 688

Breakfast: The water was turned off in our kitchen because their was a plumbing problem in the building. We were glad to have water in our bathroom but for people like us who live in the kitchen, no water in the kitchen sink is challenging. I had some Daikon Radish Sprouts growing in my Tribest Sprouter. I bought one about five years ago after interview Steve Meyerowitz, the Sproutman. But it stopped working after a year or two and I had always thought that I would email Steve and ask him how I might fix it. But then Steve was killed in a car accident in September of 2015. It was devastating to hear this news. Just recently I took out the sprouter to give it one more try. And it worked! I think what may have happened is that a seed got stuck somewhere and it took time to dry up and shrivel. We name some of our appliances after people we have loved and lost. I give my Tribest Sprouter a name – Steve. Now back to my batch of Daikon Radish Sprouts. I wanted to grow them for another day but without water, it was inconvenient to dump and refill the water. I harvested them right away. They are gorgeous!

I was hungry but didn’t want to dirty too many dishes without a dishwasher or kitchen sink. I made a simple bowl of Oats with Cherries, Coconut Flakes, Flax Seeds and Soy Milk.

Daily Green Juice: Kale, Collards, Red Cabbage, Celery, Carrots, Ginger, Lemon.

Lunch: It’s not clear how long the water will be off. We are not inspired to get creative in the kitchen as a result. Fortunately there was Butternut Squash Lasagna leftovers with Spicy Marinara and Green Bell Peppers.

Evening: We couldn’t decide what to do – go out for dinner or try and make something without water in the kitchen. We nibbled a little on almonds and raisins. But I needed something substantial. I made a Kale Salad with Corn, Pine Nuts, Red Onion, Flax Seeds and Balsamic vinegar. When finished I did the dishes using a bucket in the bathtub. Gary said it was like camping. I agree.
