Breakfast: I had a networking lunch planned. I wasn’t very hungry and didn’t want to eat too much for breakfast. Herbal Iced Tea and Pineapple sounded good. Gary insisted I eat one of the Sourdough Cornmeal Pancakes I had made yesterday. I’ve been eating my pancakes dry these days, since I don”t like them too sweet. I was chatting away and taking bites of the pancake when I almost choked! It was painful going down. A simple reminder to be mindful while eating. Chew carefully before swallowing and certainly before talking!
Lunch: I had arranged a lunch to introduced Eric Weltman, Senior Organizer of Food and Water Watch to Rachel Acheson who recently joined the NYC Mayor’s Community Affairs Unit as a Community Liaison for animal issues.
We went to a restaurant near City Hall called Aahar. They offered the Vegetarian Lunch with several vegan options to choose from.
Dinner: I was happy to be back home for a homemade meal. We had Kale Salad with Pineapple, Tomatoes, Scallions and Little Seed Caesar Dressing. Gary made a big jar of that dressing. Have you tried it yet? He also baked a bunch of Potatoes. They go well with the dressing too, and a little Avocado on the side.
Evening: Treat alert! Gary made Teeccino with Soy Foam for both if us. I did the Cinnamon sprinkling. It’s a lovely treat.
