Breakfast: Oatmeal Appreciation Week continues with pretty much the same bowl as yesterday: Oats, Apples, Pears, Cacao Nibs, Raisins, Flax Seeds, Coconut Milk and Almond Yogurt.
Lunch: My family celebrates my niece’s birthday and Father’s Day together. There were lots of vegan salads for everyone and my mom brought her classic Vegan Chopped Liver.
My niece had a dairy ice cream cake and there were two big bowls of fabulous fruit for those of us abstaining from cake.
Daily Green Juice: Kale, Celery, Carrots, Lime, Ginger
Dinner: Back at home for dinner, this week’s precooked foods came together in a tasty skillet dish with Black Beans, Corn, Tempeh, Tomato Paste and Baked Potatoes
Evening: I made a simple Coconut Milk, Banana and Vanilla Shake while I finished up reading Even Vegans Die for this Tuesday’s show.
