What Vegans Eat – Day 942

Breakfast: It’s the weekend and I was in the mood for big weekend brunch food. Omelettes! I made vegan omelettes with seasoned Garbanzo Bean Flour. I am always modifying recipes, even my own. I added a little baking powder to the Garbanzo Bean Flour (1 teaspoon baking powder per cup of flour). I poured more batter than I usually do and made a thicker pancake rather than a thin crepe. The baking powder allowed it to rise a little. We liked this version a lot. I filled mine with Porcini Mushrooms and Sauerkraut. Gary had Sautéed Red Onions in his.

Lunch: Gary takes a long walk almost every day. I don’t always get to join him but I made sure I could today. Afterwards, we stopped at the small grocery across the boulevard where we live. We picked up a pineapple, two cantaloupes, some cherries and Rambutans! I first discovered rambutans in Costa Rica where they are called Mamón Chino. My friend Beth had a number of Mamón Chino trees and when the fruit was ripe we would pull them off the tree and feast on them. The reddish leathery skin, covered with fleshy pliable spines is peeled off and you eat the grape-like fleshy fruit. There is a nutty seed inside which I have heard may be cooked and eaten, but I have never tried that. At $5.99/pound I was not going to feast on them here in New York but I brought home six of them to reminisce and introduce them to Gary. I also had a Sludgie made with Kale leaves and stems, Celery, Carrots, Banana, Cacao Nibs, Peanut Butter and water.

Dinner: We had a simple meal of Barley with Little Seed Caesar Dressing, Kale with Onions and Mung Bean Chili Con Barley Soup.
