What Vegans Eat – Day 1467

First Meal: Gary and I are happy to be together. We are happy eating together. But we don’t have to eat the same way. I made organic Polenta and topped it with Gary’s homemade Marinara Sauce and Nutritional Yeast. Gary topped his Polenta with Apricot Butter. Savory or Sweet – have it your way.

 
Second Meal: Gary was at rehearsal all day and I worked from his dad’s house. When he came home, he made a quick Cashew Cheese Sauce and served it with organic Brown Rice Pasta and organic Green Peas. This is pure comfort.

 
Third Meal: We were invited to movie night at cousins Nancy and Wade’s home. They put together a healthy spread of snacks – Hummus, Avocado Hummus, Carrot Sticks, Peanuts along with gluten-free crackers and chips.

 
After getting a tour of the renovations they have been working on, we settled downstairs in their movie room for Air Pop and a great film – The Green Book. Have you seen it? It may just be my favorite movie pick for the year.
