One skillet dinners are easy and have that good, old-fashioned, home-style cooking feeling to them.
1 package (8 ounces) organic tempeh
1 teaspoon cumin
1/2 teaspoon turmeric
1/2 teaspoon medium-hot chipotle chili powder (optional)
1 teaspoon parsley flakes
1 cup water
1 can (15 ounces) diced, organic tomatoes, no-salt-added
1 cup frozen organic corn
salt to taste (I don’t add salt)
1. On a cutting board, grate the entire package of tempeh.
2. Peel and chop the onion into 1/2-inch pieces.
3. Turn heat under skillet to medium high. Add all the ingredients above. Cook about 15 minutes, stirring occasionally. Remove from heat.
Serve over organic whole grains or with organic, sprouted corn tortillas.
